I live in the tropics and keeping the crust cold was difficult. I think I didn’t get the filling thick enough and the whipped cream topping turned into butter – I kept mixing it because it didn’t make peaks and all of a sudden the cream turned grainy BUT THE FLAVORS WERE OUTSTANDING!!! I WILL try again!! And many other of your recipes look delicious!

The only variation I made was to do a spiced wafer crust, just because I like the combination of ginger and coconut. Made it for my Dad’s 86th birthday, and he loved it. Thank you so much! That is exactly what I needed. I use this recipe as the base for an Almond Joy Pie—I use your Oreo crust as a base and add your chocolate ganache and toasted almonds/shredded coconut on top. I am very excited to make this again, and I so appreciate your help. Thank you!

Hi Rebecca, you’ll want to remove the 1/2 cup of mixture after it has boiled for 2 minutes and you reduced the temperature to medium-low. Hope this helps!
