Hi Karen! If your cookies were dry, could they have been over-baked? Also make sure to spoon and level your flour when measuring (or use a kitchen scale). Thank you for giving this recipe a try.

I’m not sure why. This cookie is very flavorless and somewhat dry. I used buttercream frosting and that saved the cookies. It was a good dough to work with. I was only able to get 17 cookies from this recipe. Maybe my cutters were bigger.

The instructions are great! The rolling out before refrigerating and cutting is ingenious. They don’t lost shape during baking – they come out beautifully! They do stay soft and have good mouth feel. My only problem is they just don’t have much flavor, just meh. I use real, unsalted butter and premium vanilla extract. I would reserve this recipe for times when I need to make cutouts but don’t plan on eating them.

However I found the dough absolutely awful to work with, I added flour to make it less sticky but it was useless. I’ve rolled up what I could salvage into a ball and put back in the fridge and will leave it for 24hrs and hope that helps
