I feel silly even calling this a recipe because it is, as the title suggests, the easiest appetizer. If you’re entertaining this summer, let this recipe take some work off your hands.
For the bread, I used both a whole wheat baguette and a simple white baguette. Having both whole wheat and white varieties gave guests more options to try. If you have any leftover bread, you can use it to make mini french toast.
My #1 tip? Toast the bread slices! This not only gives them a pleasant crunch, but allows the goat cheese to spread on easier since the bread is warm.
Use a creamy goat cheese. Mix the goat cheese with a little honey, which adds flavor and makes it a little easier to spread.

Ingredients
- 1 French baguette (18 inches), cut into 3/4-inch slices
- 8 ounces creamy goat cheese
- 2 Tablespoons honey, plus more for drizzling
- 1 cup sliced fruit (strawberries, blackberries, peaches)
Instructions
- Preheat oven to 350°F (177°C). Place bread slices on a baking sheet. Bake 10 -12 minutes or until lightly toasted. (This is the ONLY cooking you’ll do! Woohoo!)
- Meanwhile, mix the goat cheese and honey together until relatively smooth. If it’s a little crumbly, that’s ok. Spread the goat cheese mixture on the toasted bread. Top with fruit.
- Before serving, drizzle each crostini with honey. Keep leftovers covered tightly in the refrigerator for a couple days.

- Make Ahead Instructions: Prepare recipe through step 2, only do not top with fruit. Cover the goat cheese-topped bread slices tightly and store in the refrigerator for up to 1 day or for up to 8-10 hours at room temperature. Then top with fruit and honey. So, prep in the morning and finish in the evening! So easy.

This recipe sounds wonderful! Do you have any suggestions for what I can replace the goat cheese with? My family doesn’t like goat cheese and I travel often to places where it’s not available, but I really wanna try the recipe still.

I love making things ahead of time (so I’m not whirling around the kitchen instead of socializing) and I see that you say to do steps one and two and then refrigerate. Does that not make the crostini soggy, especially with goat cheese on top? I can’t wait to try these!

If you are new to goat cheese, try a commercial brand that is mild. Ask your grocer. Goat cheese is great to get to know if you are a cheese- lover, because it has lots less fat and cholesterol. Finding the right brand/ style and I think you can like it !
